Some weapons can counter backstab fishing well, like black knight greataxe 1h r1s, because their hitboxes surround you. This does not work if the opponent can poise through it. Another counter is to work out which way around you they're circling, and move backwards/sideways in that direction to get behind them for your own backstab.

This game isn't just as Exciting. It doesn't feel like a proper souls game really. What I really want is Dark Souls 1 with Dark Souls 3 backstab mechanic. Because apart from the ultra abusable backstab system and the rather rubbish net code system Dark Souls was generally my favourite. Could do with optimising though.

Backstab's feature 2hit confirmations, which check for orientation + distance on the first confirm (when you press R1, but not in the 1/2 a second later). On the second confirm, it only looks for distance, and the attacker is even allowed to be hit during this phase and the BS will still go through.
I work in the industry as a sound designer and I can safely say most (not all) instances of companies using sound libraries are for three reasons: The company doesn't value sound enough and treats it as an after thought, then when it's two weeks from release they realize they need more assets.
Unfortunately, I seem to be having an issue where my game will stutter for between .5 - 1 seconds fairly frequently. Seems to be related to either autosave or the game rendering a new area (or, occasionally, something completely unrelated like an enemy death animation or circling around for a backstab triggers it as well).

Sure but in DS1 backstab was such a cheesey and powerful method of crowd control it they needed to do something. You'd run into 3 mobs and just chain backstab them to death. The community was pretty happy with the idea of no invuln frames during the animation. Obviously they changed their minds, but it's harder to backstab now, so it works out.
